For the dough, place 60 g rolled oats, 40 g cocoa powder, a pinch of salt, 80 g maple syrup and 80 g cashew butter in a bowl and stir with a spatula or shape into a cookie dough ball with your hands. Roll out the cookie dough with a rolling pin (it should be between 0.5 and 1 cm thick). Use a glass or cookie cutter to cut out circles.
For the filling, mix 40 g cashew butter and 20 g maple syrup, then divide between six cookies and place a second cookie on top. And that's it!
