Preparation

Prepare the instant couscous in lightly salted water according to the packet instructions, drizzle with olive oil and fluff up a little. Wash the rocket and dice the soft apricots and cucumber. Then finely chop the garlic clove and mix with olive oil, tahini, lemon juice, salt and pepper to make a dressing.

Mix the couscous with the cucumber, apricots and rocket. Then dress with the dressing and finally top with the smoked almonds.
